Coat an 8" x 8" glass baking dish with cooking spray. In a large bowl, stir together the butter and applesauce. One at a time, stir in the sugar, cocoa powder, egg or egg substitute, vanilla, flour, and walnuts until well mixed. Spread the batter in the prepared pan. Bake for 25 minutes, or until the sides begin to pull away from the pan. Cool in the pan on a wire rack. Cut into squares and sprinkle with the confectioners' sugar (if using). Snickers Pie
Serves: 8
12oz. fat free frozen vanilla yogurt 1 small box sugar free instant chocolate pudding 1/4 cup chunky peanut butter 1 cup cool whip free 3 ozs. grape nuts cereal
Mix all ingredients together and pour into 8" pie pan and freeze.

Fat Free Fudge
3 C. sugar 2/3 C. cocoa - Hershey's low fat 1 1/2 C. evaporated skim milk 1/4 C. Butter Buds 1/2 t. vanilla extract 1/2 t. almond extract
Bring sugar, cocoa, and milk to full boil - constantly stirring. Once reached - stop stirring - use candy thermometer to reach soft ball stage - 234° F.
Remove from heat, sprinkle butter buds and extracts on top - Don't stir. Let temperature come down to 110° F. Beat thoroughly until it loses glossiness.
Work quickly to spread in a 8 or 9" pan. Cool and cut.

Dunno if anyone is crazy about cheesecake as I am but I found this and thought maybe I'd try it! Lite and Luscious Cheesecake 14 squares HONEY MAID Low Fat Honey Grahams, finely crushed (about 1 cup) 3/4 cup sugar, divided 3 Tbsp. margarine or butter, melted 1 envelope KNOX Unflavored Gelatin 1 cup fat free milk 2 pkg. (8 oz. each) PHILADELPHIA Fat Free Cream Cheese, softened 1 tsp. vanilla 1 tsp. grated lemon peel MIX crumbs, 1/4 cup of the sugar and margarine in small bowl. Press on bottom and side of 9-inch pie plate. Bake at 350°F for 5 minutes; cool. SPRINKLE gelatin over milk in small saucepan; let stand 1 minute. Stir on low heat until gelatin is completely dissolved, about 3 minutes. Cool slightly. BLEND cream cheese and remaining 1/2 cup sugar in large bowl with electric mixer on medium speed until smooth. Add vanilla and lemon peel. Gradually blend in gelatin mixture on low speed until well blended. Pour into prepared crust. Refrigerate 2 to 3 hours or until firm. Garnish with strawberry slices before serving, if desired. Makes 8 servings

1 8 oz. package fat free cream cheese 1 8 oz. container fat free orange yogurt 5 packets Equal 1/4 teaspoon vanilla extract 1 small package sugar free orange gelatin 1 cup fat free cool whip l low fat graham cracker piecrust
1. Beat cream cheese and yogurt until creamy. 2. Add equal and vanilla extract, continue mixing. 3. Stir in orange gelatin, beat to blend. 4. Fold in Cool Whip. 5. Pour into piecrust and chill for least 2 hours.
Serves 8. Per serving: Calories 226, Fiber 0.2g, Total fat 7.7g, Protein 12.8g, Saturated fat 3.9g, Sodium 501mg, WW points 5, Carbohydrates 24.4g
Optional: Add Cool Whip to the edges of the pie and garnish with slivers of lime for color.

1 Granny Smith Apple 2 Tablespoons Grape Nuts Cereal 2 Tablespoons Sugar
1. Wash apple(s) and core. 2. Place apple(s) right side up in a medium sized baking dish. 3. Layer the sugar and Grape Nuts in the apple until the core is full to slightly overflowing. 4. Sprinkle 2 teaspoons of water on each apple. 5. Add a little water to the bottom of the baking dish. 6. Bake at 350 degrees for about 45 minutes or until apples are soft.
Serving Size: 1 Apple Calories 223, Protein 1.8g, Carbohydrates 57.1, Fat 0g, Cholesterol 0mg.
Optional: Sprinkle top with cinnamon to taste

3 cups low fat graham cracker crumbs 1 cup non fat yogurt 16 oz. fat free cream cheese 1/3 cup sugar 1 1/2 cups frozen strawberries 3 1/2 cups fat free Cool Whip 6 cups sugar free strawberry Jello (1 large and 1 small)
1. Preheat oven to 350 and spray a 9" X 13" pan with fat-free cooking spray.
2. Mix graham cracker crumbs and yogurt together. Spread evenly over bottom of pan. Bake for 15 to 20 minutes until crisp.
3. Prepare Jello according to directions on package, add frozen strawberries and put in refrigerator until it begins to set.
4. Mix cream cheese, sugar and 1/2 cup Cool Whip. Now start to layer the salad.
5. On top of the baked crust, spread the cream cheese mixture evenly. Set aside.
6. Once the Jello starts to set, put it over the cream cheese mixture. Return the pan to the refrigerator to allow Jello to set completely.
7. Top with remaining Cool Whip and garnish as desired. Garnish (banana & blueberries) not included in nutrient analysis.

Citrus Cheesecake
Serves: 12 Serving Size: 1 slice (1/12 of cake)
INGREDIENTS Crust Ingredients fat free cooking spray 1 cup graham cracker crumbs 2 tablespoons brown sugar 2 tablespoons butter or margarine, melted
Filling Ingredients 1/2 cup sugar 1/3 cup wheat flour 1 teaspoon vanilla extract 2 8-oz. packages nonfat cream cheese 2 eggs 1/2 cup 1% milk 1/3 cup nonfat sour cream 1 tablespoon fresh lemon juice 1 tablespoon fresh lime juice 1 tablespoon fresh orange juice 1 teaspoon lemon peel, grated 1 teaspoon lime peel, grated 1 teaspoon orange peel, grated 3 egg whites 1/4 cup sugar
DIRECTIONS 1. Preheat oven to 300º F.
2. Prepare the crust: Coat a 9-inch springform pan with cooking spray. In a medium bowl, mix crumbs, brown sugar and butter then firmly press mixture into bottom and 2 inches up the sides of the pan.
3. Prepare the filling: In a large sized mixing bowl, combine sugar and flour then add vanilla, cream cheese, and eggs. Beat until smooth. Add milk, sour cream, citrus juices and peels and beat until smooth.
4. In a separate mixing bowl, using clean and dry beaters, beat egg whites at room temperature at high speed until soft peaks form. Gradually add 1/4 cup sugar, 1 tablespoon at a time and beat until stiff peaks form. Gently fold egg white mixture with cream cheese mixture.
5. Pour into prepared crust and bake at 300º F for 1 hour or until set. Remove from oven and let completely cool on a wire rack. Cover and chill for 4 hours or overnight.
6. Sprinkle with grated lemon, lime and orange zest before serving (optional.)
